The manual proposes the recipes of the Bolognese tradition according to the dictates of the "Vecchia Scuola Bolognese", following the classic style of presentation of cookbooks: from appetizers through first courses, soups and soups, to main courses, side dishes and sauces, to end with desserts and liqueurs. Each recipe is accompanied by images and illustrations, while the execution is divided into well detailed phases. Particular attention is paid to puff pastry and bread. Also many suggestions on how to organize menus for special occasions: birthdays, children's parties, after-dinner with friends, lunches in the countryside. An English edition was also produced of the volume. "La Vecchia Scuola Bolognese" by the brothers Alessandro and Alessandra Spisni, multi-medal sfoglini, several times awarded at the Matterello d'Oro, is since 2002 Bologna's international cooking school of the city of Bologna. The School offers a rich didactic activity of cooking classes that every year attracts numerous schools from Italy and abroad and foreigners who love good food, eager to learn the secrets of traditional Bolognese dishes.
